Um Ali- is the most popular dessert in UAE, and it has its roots in Egypt. Um Ali means the queen of puddings that is filled with the goodness of dry fruits. Its heavy, rich and served as the most favorite dessert during Ramadan.

  • 4 Croissants or 200g (7oz) Cooked Puff Pastry
  • 500ml (16fl oz) Milk
  • 140g (5oz) Sugar
  • 100g (3 1/2 oz) Unsalted Pistachios
  • 100g (3 1/2 oz) Flaked Almonds
  • 100g (3 1/2 oz) Raisins
  • 50g (2 oz) Grated Coconut
  • 100ml (3 1/2fl oz Creme Fraiche or Thick Cream
  • 1 tsp Cinnamon Powder
  • Brown Sugar for Topping

Mix together the nuts, raisins, cinnamon and 2 tbsp of the sugar into a bowl. Break the croissants in to the bowl and mix well. Transfer to a casserole dish.

Bring the milk and 4 of sugar to the boil in a pan. Pour the hot milk in to the casserole bowl and leave for 5 minutes

Combine the creme fraiche with the remaining sugar and pour in to the casserole bowl to form a layer on the top. Sprinkle with the brown sugar. Bake in the oven at 175c for 15 minutes or until the top starts to brown.
